Podgorica, (MINA-BUSINESS) – According to the Ministry of Agriculture and Rural Development, Montenegrin prosciutto was the fifth product to have been protected in Montenegro.
The Ministry says in a press release that the protection of this product by a geographical indication label has been initiated by the prosciutto producers form Cetinje from the Montenegrin Prosciutto Association, representing Zrnozit, Martex, Interproduct, Monstate, SNJ Gornic, DDR commerce, Mianja and Nani prom.
“The natural environment, climate in the production region, long tradition of the production and a good reputation of the product, surpassing the boundaries of the production region and Montenegro, provide the basis for the protection of Montenegrin prosciutto as a specific and authentic product. The effects of the geographical surroundings, climate, and skills in the application of special centuries-long recipes in the production process, are the reasons why Montenegrin prosciutto is appreciated that much by the consumers, especially the tourists visiting Montenegro,” the Ministry says in a press release.
The villages from the region in which the prosciutto is produced are located within the borders of Old Montenegro, and the existing administrative borders of the municipalities of Cetinje, Niksic, Danilovgrad, Podgorica and Bar.
The production process takes at least 12 months. The traditional process in the modernized facilities does not include any additives other than sea salt, and involves smoking over the burning beech wood, resulting in the products of the recognizable aroma, texture and rich flavour.
